Texarkana Harley-Davidson Chili Cook-Off

Official Prep, Cooking & Contest Rules
- All chili must be cooked on-site the day of the event.
- No pre-cooking of meat, beans, or sauce is allowed.
- Chili must be made from scratch using raw meat and/or beans. (Canned beans are allowed if opened on site.)
- Pre-made chili mixes are not allowed.
- Seasonings, spices, and vegetables may be pre-chopped at home before the event.
Cooking Equipment
- Each team must bring their own cooking equipment (pots, burners, utensils, propane, etc.).
- Limited electricity will be available — plan accordingly.
- Teams are responsible for safe food handling at all times.
Portions & Turn-In
- Each team must prepare a minimum of 1 gallon of chili for judging and sampling.
- Chili must be turned in by the official deadline (1:30 PM).
- Judging cups must contain chili only — no garnishes. (Dealer will provide cups.)
Judging
- Judging is blind and will be scored on Taste, Texture, Aroma, and Appearance.
- Flavor carries the most weight in scoring.
Health and Safety
- Chili must be kept at a safe serving temperature (above 140°F).
- Gloves must be worn when handling raw meat.
- Teams must keep their area clean and safe throughout the event.
Disqualification
- Using pre-cooked chili.
- Missing the turn-in time.
- Unsafe food handling practices.
Schedule
- No Entry Fee!
- Team Check-In & Setup: 8:30 AM – 9:30 AM (all teams must be cooking on site)
- Public Tasting: 1:30 PM
- Awards Ceremony: 2:30 PM
Prices
- 1st Place: $300 Cash, plus Trophy and plaque.
- 2nd Place: $150 Cash plus Plaque.
- 3rd Place: $50 Cash plus Plaque.
- People’s Choice: $150 Texarkana H-D Gift Card
